When the exhibition at the Göteborg Museum of Art closed Stefan Karlsson rented a store situated in Linnéstaden, Göteborg, to continue his surveys about the nature of art. The store was a nice and beautiful site featuring two large exhibition windows at street level and three separate rooms. The first room housed the Enzyme Bar and Stefan raising and refining wheat grass, studying the chlorophyll molecule and the photosynthesis process, and producing Rejuvelac. Gallery Sub Bau was situated in the second room, and the third room was a studio-office combination. The establishment kept open Monday through Saturday noon till 6 PM. The Enzyme Bar quickly became a gathering place for various esoterically oriented social groups mingling with gallery visitors. People interested health food watched the hottest contemporary art and people interested in art drank the products of the "Enzyme Bar" A frequently asked question, from the audience in the Enzyme Bar as well as from gallery visitors, was: "Is this Art or is it Real?". The discussion about the nature of art went on at the Enzyme Bar hosted by Stefan Karlsson March through October 1997,
