In January 1999 Stefan Karlsson was invited by Prime Manager Lena Boetius at the Göteborg Museum of Art to do set up an exhibition to be staged during April. During several years Stefan has worked with various art projects that questions the nature of art, that is, projects that have been difficult for the audience to perceive as art. One audience FAQ was, "Is this art, or is it for real?". From that point Stefan went on with the survey on the nature of art, and "Enzyme Bar" was exhibited at the Göteborg Museum of Art in April 13 through May 12.

Stefan Karlsson's "Enzyme Bar" is a conceptual artistic dream about giving mankind a better life through fluids such as Rejuvelac and wheat grass juice. Karlsson himself a vegetarian since fourteen years cultivates beans in water onstage, which after a few days yields Rejuvelac, a protein crammed and acidic beverage. In white boxes the wheat grass is raised to be ground and transformed into green juice. The "Enzyme Bar" is an intricate event that effectively accentuates the floating border between what is art and what is not. Karlsson continues his long-term project of moving the boundaries of the domain of art.
